In this specific batch of Yellow Bourbon, fermentation is carefully managed over 120 hours within food-grade plastic fermentation containers, ensuring precise CO2 control. Subsequently, the coffee undergoes a total of 25 days of direct drying on African beds. The drying process is intentionally interrupted, allowing the coffee to reach a humidity level of 20%, and it is then completed over 8 additional days. This meticulous processing method contributes to the unique qualities of this Yellow Bourbon coffee.
