Elipse greets you with the subtle elegance of black tea and the refined essence of Earl Grey. As you sip, notes of stone fruit and jasmine bloom on your palate, mingling with the sweet, creamy tones of nougat and milk tea. It’s a harmonious blend of flavors that lingers like a soft, melodic echo, inviting you to explore each layer of its intricate profile.

After the ripe Geisha cherries are harvested, they enter a carefully controlled fermentation process in nitrogen-infused stainless steel tanks. This 50-hour journey, closely monitored for temperature and pH, ensures that only the most desirable aromas emerge. Once the cherries have reached their peak, they are washed and dried on a specialized three-tiered bed system, preserving the delicate complexities within.

About the Farm

  • Finca Deborah is an absolutely gorgeous coffee farm in the Los Pozos micro-region of Volcan, Panama. It is one of the most awarded coffee farms on the planet, having significant success in all World Coffee Competitions - Finca Deborah is the home to the only Geisha to have ever won the World Barista Championship, Berg Wu in 2016.
  • Jamison Savage and his family are the ones to thank for the wonders of Finca Deborah. The farm starts at 1900 meters and climbs to over 2000. The rainforest canopy, dense cloud coverage and a vision for natural and bio-dynamic agriculture leads way to one of the most stunning terroirs the coffee world has known.
