Coffee Information

Varietal: Castillo

Process: Honey, fermented with Wine yeast and blackberries

Producer: Jairo Arcila

Geography: Quindio, Colombia

About The Farm
  • This exceptional coffee was grown by Jairo Arcila on his farm, Santa Monica. The cherries underwent a dry anaerobic fermentation for 72 hours with the pulp intact, during which blackberries and wine yeast were added to enhance the coffee's unique flavour profile. Following fermentation, the cherries were pulped and carefully dried on raised beds to achieve the perfect moisture content.
  • This microlot is 100% Castillo, a variety developed by the Federación Nacional de Cafeteros. Known for its higher productivity compared to Caturra, Castillo is also celebrated for its resistance to coffee leaf rust, ensuring consistent and high-quality harvests.

Loverboy / Colombia

The addition of blackberries during fermentation imparts their natural sugars, organic acids, and fruity characteristics into the coffee, amplifying its sweetness and complexity. Wine yeast, commonly used in winemaking, brings precision and control to the fermentation process. It enhances the development of rich, layered flavours by promoting the production of esters and other aromatic compounds. Together, the blackberries and wine yeast work in harmony to create a coffee with vibrant fruit notes and a refined, wine-like quality.

After fermentation, the cherries were pulped and carefully dried on raised beds to achieve the ideal moisture content, ensuring the flavours are locked in and the coffee’s quality is preserved.

I really loved the flavor of this coffee! My only complaint is the cost for such a small quantity.

The flavours of raspberry and dark chocolate really came out when I did this as an espresso, I've ordered it twice I like it so much

Too acidic for my liking

Personal preference of the sweeter, nuttier coffees. We probably should’ve read the details before purchasing this one!

It's as bold as it claims

It's actually not my preferred flavour, different from I expected, but it gets 4 stars because it very much embodies the bourbon flavour as described. I don't get the raspberry or rose, but I also don't have a highly sensitive palette. It is a very bold coffee, even the scent of it is strong. If that's your preferred strength, then this is for you.

5 stars isn't enough!

I feel like a little kid at Christmas, waiting for the email that lover boy has been released. The only negative thing you could say about this coffee is that it isn't available year round. This is hands down my favourite from Rosso. The ripe berry aroma and flavor explode out of the cup, an absolute delight to the senses. The acidity is well balanced and the body, though not completely full-bodied, is still silky and comforting. I can't wait until next February!
