In this specific lot of Yellow Bourbon, the fermentation process extends for 144 hours within GrainPro bags, with precise temperature control. Subsequently, the coffee undergoes a total of 25 days of direct drying on African beds. The drying phase is intentionally interrupted for 10 days, allowing the coffee to reach a humidity level of 20%, and then it is completed over an additional 10 days. This meticulous processing method contributes to the unique qualities of this Yellow Bourbon coffee.
