    This exclusive coffee was carefully crafted through a unique depulping process. The coffee is not fully washed and can be thought of like a honey process, this allows the natural sugars to shine through. The result is a coffee that's both refined and complex.

The result is a clear, distinct coffee experience that showcases the delicate interplay between science and craft.

    About the Farm

    • The de Dianous family began their coffee journey in Boquete in 1914 with the purchase of a farm in Bajo Mono. In the 1980s, Dr. Renan Esquivel, a Panamanian pediatrician and nature enthusiast, bought the farm and planted a variety of exotic trees and coffee varietals. The farm was acquired by Jose Benjamin de Dianous and Stefan Arwed Müller in 2011, who have since focused on renewing the plantation to ensure high-quality coffee while prioritizing environmental care and worker well-being.
    • Hacienda Bajo Mono spans 33 hectares in the Highlands of Chiriquí, near Boquete, at the foot of Barú Volcano. The region’s unique microclimate, volcanic soil, and spring water create ideal conditions for specialty coffee. The beans are hand-picked, selected, and processed using minimal water in an Eco Mill. Some coffee is processed as Naturals, with cherries hand-selected, anaerobically processed, and sun-dried.
