  • For over 40 years, Luis Anibal Calderon has cultivated coffee in Huila, Colombia, but in 2012, financial hardship led him to take a new path—specialty coffee. He shifted his focus to rare and exotic varietals, transforming his farm, Villa Betulia, into a hub for innovation and quality.
  • This microlot is 100% Papayo, a rare mutation originating in Acevedo, Huila. Named for its papaya-shaped, orange-hued cherries, this varietal stands out for both its appearance and flavour complexity. The cherries are harvested at peak ripeness, then undergo a 30-hour underwater fermentation to enhance sweetness and depth. After fermentation, they are pulped, gently washed, and dried under temperature-controlled conditions to preserve clarity and balance in the cup.

It is most commonly grown in Huila, Colombia, where innovative producers like Luis Anibal Calderón have cultivated it with meticulous care, recognizing its exceptional quality and potential.

Papayo trees are relatively small, with elongated coffee cherries that resemble tiny papayas. While not widely planted due to its lower yield and delicate nature, the varietal is prized for its bright acidity, floral aromatics, and complex fruit notes. In the cup, Papayo often expresses flavours of tropical and citrus fruits, stone fruit sweetness, and elegant floral tones, making it a standout among Colombian specialty coffees.
