As it cools, you’ll pick up the sweetness of peach alongside a gentle touch of bergamot, all rounded out by a honeyed finish. These handpicked Geisha cherries go through a carefully managed washed process: the skins and mucilage are removed, followed by a gentle rinse to preserve the coffee’s delicate aromatics. Finally, the beans are dried on raised beds, which lock in every nuance of flavour and ensure a balanced, layered profile in your cup.

Tucked away on the southwestern side of Volcán Barú in Chiriquí, Panama, Los Lajones is a small, high-elevation farm run by the legendary Graciano Cruz. Known for his eco-friendly methods and focus on quality, Graciano continues to push the boundaries of coffee production. The farm’s elevation, ranging from 1,800 to 2,100 meters, combined with minimal environmental impact, allows the Geisha variety to show off its best flavors.

  • Finca Los Lajones is a renowned coffee farm located on the slopes of Volcán Barú in Panama, at elevations ranging from 1,750 to 2,100 meters above sea level. Established in 1992 by Graciano Cruz, the farm spans approximately 160 hectares, with 35 hectares dedicated to coffee cultivation. The farm primarily grows varieties such as Caturra, Catuaí, and the esteemed Geisha, which thrives in the farm's unique microclimate created by its position between two lava flows.

    Graciano Cruz is a prominent figure in the coffee industry, celebrated for his commitment to environmentally conscious farming practices. He exclusively employs natural and honey processing methods, eliminating the use of water during processing to conserve resources. Under his stewardship, Finca Los Lajones became the first organic-certified coffee farm in Panama. Cruz is also known for his innovative approaches, including experimenting with anaerobic fermentation techniques to enhance coffee flavor profiles.
